    Yes sir!...I have a few recipes and have tried to invent new ones but alas they didn't turn out so great.

      I've always had success with the book: "Wild Fermentation"
      freekin' awesome.
      
      The general rule I have for kimchi is that the brine is 1tbspn salt/1 qrt. water..
      soak your stuff over night (loose), then make your spices paste and run..
      
      everything else is just fun..
      
      I'll be working on ginger beer soon :D
