I was amazed to find out that sprouts are abundant in all essential amino acids, vitamins, minerals, chlorophyll and enzymes. In many cases, three to five day sprouts have more nutrition than the plant will have at any other time in its life, in some cases by more than 600 percent. Mung beans are very detoxifying to the body so I sprout organic mung beans and eat them as part of my normal diet.
