Raw / Cooked Soup Mix

I decided that All Raw soups aren't the way to go for me. I'll juice raw when I get a juicer. I have no issue drinking something that's fair to midland as long as it goes down quick.

During the interum I decided that I'll make some Yummy Raw/Cooked veggie soup mixes. I made one today that it PACKED with vitamins and super good. Here's the recipe

Cooked Base
About 12 large (whole) freshly peeled carrots.
3-4 Long celery sticks
1/2 an onion

Cut the carrots so that all of them will steam evenly. Use a large pot and put the carrots in to steam along with the celery and half onion (you don't really need to cut the onion into pieces, just throw it in.) Sprinke a generous amount of Sea Salt on top of the steam mix along with a pinch or two of celery seed and some ground pepper or whatever you have one hand that you like. (the steam juice is what you'll use later to mix everything in the blender)

Raw Ingredients
1 Tomato
2 Huge handfulls of baby Raw Fresh Spinach (I mean a LOT)
Organic Grapeseed Oil

Raw Herbs & Spices to throw in the blender
- One or two pinches of fresh Anise
- Small handfull of fresh Dill
- Agave to taste (or a teeny bit of brown sugar if you want to cheat)
- 1/2 - Full Tb Ground Cinnamon

Blend the tomato first till it's smooth then start adding the celery as it's finished steaming (it will finish long before the carrots so pull it out and throw it in the blender)

Keep on blending : )

Then add the 1/2 onion when it's done steaming. (remember not to over steam it) If you like more of a 'bite' then under steam the onion, otherwise steam it just until your fork can push through it. The carrots will still be steaming. Turn em around a bit to make sure they're evenly cooking.

When the carrots are done add them to the blend mix then add about 3-4 tb oil and begin adding the steam juice to the desired consistency.

Blend to smitherines for as long as it takes to smooth. From there take out half the mixture and set it aside, chances are that your blender is at it's max right now : ) Add a TON of the Spinach to the blender mixture and blend to smitherines some more. Taste and add other herbs and spices as desired, you may want more cinnamon more sweetener... etc..

Throw in all your hebs but wait till the end for the Agave or Sweetener. If you're carrots are fresh and in season you may not need to sweeten at all! Unfortunately, mine were not too sweet : (
